Mocha Oatmeal Cookies

These cookies are great for coffee lovers or anyone who likes the rich taste of mocha. Also, on the plus side these cookies are low in fat with only 2 grams. Best enjoyed with a cold glass of milk!

Ingredients

3/4 cup of all-purpose flour
1 cup of quick-cooking oats
3 tbsp of cocoa powder
3/4 cup of dark brown sugar
1/2 tsp of baking soda
1/4 tsp of ground cinnamon
1/2 tsp of instant coffee granules 
1/4 cup + 3 tbsp of Prune Puree
1 tsp of vanilla
1/3 cup of semi-sweet chocolate chips
1/3 cup of raisins
1/3 cup of walnuts (pecans or almonds)

Instructions 

Preheat oven to 350F and grease cookie sheets or line with parchment paper.

Mix flour, oats, cocoa, and brown sugar in a large bowl; make sure there is no brown sugar lumps. Then, add baking soda and cinnamon. Set aside.

Dissolve instant coffee into prune puree, and vanilla in a small bowl.

Combine coffee mixture and flour mixture gradually to mix well. (The mixture will seem dry at first but will become moist with more mixing.)

Fold in chocolate chips, raisins, and walnuts into the cookie dough.

Scoop tablespoonfuls of cookie dough and drop them onto a lined cookie sheet. Place them about one inch apart and with the tip of a spoon slightly flatten each cookie. 

Bake at 350F for about 9 minutes.

Optional: Dust cookies with icing sugar.

Fold in chocolate chips, walnuts, and raisins.
Scoop cookie dough onto a lined cookie sheet.
Bake for 9 minutes and then transfer them to a wire rack for cooling. 
Dust them with icing sugar!
