All-Bran & Rye Flakes Cranberry Apple Muffins

These muffins are loaded with fiber! A great hearty and delicious option to start your day right; unfortunately, not many people are getting enough fiber in their diets. According to the Health Magazine, the average person is only getting 15 grams a day where women should be getting 25 grams and men up to 35-40 grams. Some benefits of including fiber in your diet are lowering blood sugar and cutting down cholesterol. 

Therefore, to have fiber bursting from my muffins I not only used All-Bran Buds cereal but I also used rye flakes. The rye grain is available as flour or flakes which is similar to old-fashion oats. Rye flakes is high in fiber and a hearty replacement of wheat or oat flakes.

I promise that you will not be disappointed. Here are the ingredients:

3/4 cup of All-Bran Buds or Original cereal 
1 cup of buttermilk 
3/4 cup of rye flakes  
1 cup of all-purpose flour
1/2 cup of packed brown sugar
4 tsp of baking powder
1 tsp of cinnamon
1/2 tsp of nutmeg
1/2 tsp of salt
2 eggs
1/4 cup of canola oil
3/4 to 1 cup of peeled, diced tart apples
3/4 cup of dried cranberries

Instructions

Preheat oven to 400 F and place muffin liners in muffin tray.

Combine cereal and buttermilk in a medium bowl in order to soften cereal (about 2 minutes).

Mix in another bowl; rye flakes, flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.

Beat in eggs and oil into the cereal mixture, and then mix in dry ingredients gradually.

Fold in diced apples and cranberries, and then scoop muffin mixture into 12 muffin liners.

Bake for 20 minutes or until knife or tooth pick comes out clean when poked.
